Pengaruh Bentuk Serbuk Terhadap Daya Terima Teh Kulit Melinjo Warna Merah

Abstract

Penelitian ini bertujuan untuk menganalisis pengaruh bentuk serbuk dan berat sampel teh kulit melinjo warna merah terhadap daya terima teh melinjo. Jenis penelitian yaitu eksperimen. Adapun formula dari variabel penelitian ini terdiri atas kelompok uji formula (menggunakan 3 jenis serbuk kulit buah melinjo (gnetum gnemon) warna merah dengan variasi berat sampel per sachet. Uji hedonik dilakukan terhadap 40 orang panelis semi terlatih menggunakan metode skala garis dengan skala 1 sampai 7 (sangat tidak suka sampai dengan amat sangat suka). Data diolah dengan menggunakan SPSS dengan uji statistic Uji One Way Anova dengan tingkat signifikan p < 0,05. Uji rating hedonik dilakukan untuk mendapatkan formula minuman teh melinjo berdasarkan bentuk serbuk dan berat sampel/sachet teh melinjo yang paling disukai. Seluruh atribut yang diuji pada formula teh melinjo memiliki nilai kesukaan lebih 3 sehingga dapat dikatakan bahwa setiap formula minuman teh melinjo dapat diterima oleh panelis dengan kategori agak suka dan suka. Adapun jenis formula teh yang paling disukai dengan indikator tingkat penerimaan secara keseluruhan adalah berat sampel 2,5 gram dan jenis serbuknya adalah merah halus
